I made these expecting them to be decent. They ended up being one of those recipes where you take the first bite and immediately want to make them again. They’re light in a way that actual marshmallows aren’t — no heavy sugar aftertaste, just clean matcha flavor and that soft, airy texture. And they look so good that everyone who sees them assumes it was complicated. It wasn’t.
Why These Ingredients
Gelatin — the only thing that makes marshmallows possible. When whipped with liquid it traps air and creates that signature fluffy texture. Don’t skip the blooming step — it needs to fully hydrate first.
Matcha powder — gives both the flavor and the color. Use ceremonial grade if you want a more vibrant green and a cleaner taste. Culinary grade works but the color will be slightly duller.
Honey — just enough sweetness to balance the bitterness of the matcha. You can swap for any liquid sweetener — maple syrup or agave work well here too.
Water — split into two portions intentionally: one to bloom the gelatin, one to dissolve the matcha and honey. Don’t combine them at the start.
💡 Marshmallows not getting fluffy? The most common reason is that the matcha mixture was too hot when added to the gelatin — it should be warm, not boiling. If the gelatin starts to cook, it loses its ability to whip up properly. Let the mixture cool for a few minutes before combining and whipping.
Ingredients:
• ½ cup water (for gelatin)
• 3 tbsp gelatin
• 1 tbsp matcha powder
• 1 tbsp honey
• ½ cup water (for matcha mixture)
Instructions:
- Bloom the gelatin by mixing it with ½ cup cold water. Let it sit for 5–10 minutes.
- In a saucepan, gently heat the matcha, honey, and ½ cup water — do not boil. Stir until smooth.
- In a large bowl, combine the bloomed gelatin with the warm matcha mixture.
- Whip on high speed until thick, fluffy, and airy — about 8–10 minutes.
- Quickly pour into a lined mold and refrigerate until set.
- Slice and dust with a little extra matcha powder before serving.
