Baked Milk Dessert (High-Protein, Sugar-Free, 20 kcal Per Piece)

About This Recipe
Twenty calories per piece. I started making this when I needed something sweet in the fridge at all times — something I could just grab without thinking. It sets overnight, you cut it into pieces, and then it’s just there for the whole week. The golden crust from the air fryer is the part that gets people — it looks like something from a café counter and takes about ten minutes of actual effort.

Why These Ingredients
Milk — the base of the dessert. Whole milk gives a creamier result, but lower fat works too if you want to keep the calories lower.
Cornstarch — what thickens the mixture into a sliceable dessert. Don’t reduce the amount or it won’t set properly.
Egg yolks — two roles here: they enrich the custard mixture, and the extra yolk brushed on top is what creates that golden crust in the air fryer.
Protein powder — blends into the custard without changing the texture, just bumps up the protein significantly. Use unflavored or vanilla.
Stevia — keeps it sugar-free. Any sweetener works here since you’re not baking it in the traditional sense.

💡 No air fryer? You can get the same golden crust in a regular oven — broil/grill setting at 200°C / 400°F for 5–7 minutes, watching closely. Take it out as soon as the top turns golden, it goes from perfect to overdone quickly.​​​​​​​​​​​​​​​​

Ingredients (2 servings):
• 400ml milk
• 50g cornstarch
• 2 egg yolks
• 30g protein powder
• 1 tbsp stevia

Instructions:

  1. Mix the egg yolks with cornstarch and stevia, then add the milk.
  2. Cook over medium heat, stirring constantly, until thickened.
  3. Grease a mold with oil or butter and pour in the mixture. Let it cool to room temperature.
  4. Refrigerate for 2–3 hours or overnight.
  5. Cut into pieces and brush each with egg yolk.
  6. Air fry at 170°C / 340°F for up to 10 minutes — take out as soon as a golden crust appears.
