Silky Protein Chocolate Mousse (High-Protein, Sugar-Free)

This is the recipe I go to when I want something that feels completely indulgent. It’s silky, it’s rich, it tastes like proper chocolate mousse — and nobody ever believes me when I tell them there’s protein powder in it. 57 grams of protein in one batch, set in the fridge overnight, and it’s there waiting for you the next day. That’s the kind of dessert that actually makes healthy eating sustainable.

Why These Ingredients
Dark chocolate + cocoa powder — two layers of chocolate flavor. The dark chocolate adds richness and a slight bitterness, the cocoa powder deepens the overall taste. Together they make it taste much more complex than a simple protein shake.
Greek yogurt — stirred in after cooling, it adds creaminess and extra protein without changing the flavor. Don’t add it while the mixture is still hot — it can curdle and the texture will suffer.
Protein powder — chocolate flavor works best here and blends seamlessly. Add it off the heat and blend briefly — just 5-10 seconds is enough to make it completely smooth.
A pinch of salt — makes the chocolate flavor more pronounced. It sounds like a small thing but you’ll notice the difference.
Gelatin — what gives the mousse its set texture so it holds in the cup. Bloom it properly in cold water first — rushed gelatin won’t dissolve evenly.

💡 Mousse came out with lumps? The most likely cause is adding the protein powder or yogurt while the mixture was still too hot. Let it cool until it’s just warm to the touch before mixing them in, then blend briefly to bring it all together.

Ingredients (4 servings):
 • 300ml low-fat milk
 • 100g Greek yogurt
 • 40g dark chocolate
 • 20g cocoa powder
 • 32g chocolate protein powder
 • 7–8g gelatin + 40ml cold water
 • 1 tbsp sweetener
 • A pinch of salt

Instructions:
 1. Bloom the gelatin in cold water for 5–10 minutes.
 2. Heat the milk with cocoa, sweetener, and salt — don’t let it boil.
 3. Remove from heat and add the dark chocolate. Stir until fully melted.
 4. Add the bloomed gelatin and mix well.
 5. Let the mixture cool slightly, then add the protein powder and Greek yogurt.
 6. Blend for 5–10 seconds until silky and smooth.
 7. Pour into cups and chill for 3–4 hours.
