Homemade matcha marshmallows with just 5 ingredients. No sugar, naturally green, light and fluffy. Ready in 20 minutes plus chilling time.
I didn’t expect these to work as well as they did. They’re light, they’re actually matcha-flavored, and they look impressive enough that people assume you spent way more time than you did.
Ingredients:
• ½ cup water (for gelatin)
• 3 tbsp gelatin
• 1 tbsp matcha powder
• 1 tbsp honey
• ½ cup water (for matcha mixture)
Instructions:
- Bloom the gelatin by mixing it with ½ cup cold water. Let it sit for 5–10 minutes.
- In a saucepan, gently heat the matcha, honey, and ½ cup water — do not boil. Stir until smooth.
- In a large bowl, combine the bloomed gelatin with the warm matcha mixture.
- Whip on high speed until thick, fluffy, and airy — about 8–10 minutes.
- Quickly pour into a lined mold and refrigerate until set.
- Slice and dust with a little extra matcha powder before serving.
